Planning a Pig Roast? Well here are some helpful tips for you to consider:

1. The most suitable weight for a whole pig Roast is between 30-50 pounds dressed. They tend to be tastier. As we all know though, once you inform your friends that you are having a Pig Roast you are more than likely going to need a bigger pig. In this case Joe and I recommend cooking two smaller pigs rather than a larger one.

2. Dressed pigs are generally 70% of the actual weight. Therefore, a 100 pound pig would be about 70 pounds.

3. A dressed pig will yield 50% of the dressed weight in cooked meat. Therefore, a 70 pound dressed pig will yield approximately 35 pounds of meat.

4. It is our experience that at pig roasts people tend to "Pig out" Pun intended! at least the people Joe and I know have a hearty appetite so it's a good idea to have additional food for your guests to snack on. Obviously, a nice Adult beverage is a great complement at any pig roast!

5. Dos Cubanos recommend 1/2 - 1 pound of pork per person. a 60 pound pig will provide approximately 35 pounds of meat after it's cooked and will feed between 35-70 people.

Cooking Methods

Typical Roasting time for whole pigs up to 100 pounds is usually 4-5 hours

While it is possible to cook many meats in La Caja China at Dos Cubanos Pig Roasts we specialize in whole pig roasts.

The pig is placed inside the box, the lid is attached, and charcoal is placed on top of the lid to roast the meat inside the box. The grease flows into a catch pan placed under the pig.

Using this method, Dos Cubanos Pig Roasts can roast a pig in about 4-6 hours setup time included. This leaves us plenty of time to enjoy an adult beverage, play some dominoes or just talk..something us Cubans are good at.
